Sun Dried Tomato Pesto

Author Notes: Pesto is an amazingly versatile sauce to have on hand (make lots and freeze it in small containers, for use at a moment's notice). Use it on pasta, over grilled chicken or fish or as a seasoning agent in soups and salads. Pesto has strong flavors, so a little can go a long way. It's easy to find ready made pesto in stores, but it is rather pricey. Why pay more? It's very simple to make at home if you have a food processor.

Use this sun dried tomato pesto when making Goat Cheese Spread with Tapenade, Pestot nad Sun Dried Tomatoes (see recipe links below).

Ingredients: 1 jar (10-12 ounces) of oil packed sun dried tomatoes
1-2 large garlic cloves
2 tablespoons olive oil (reserved from tomato jar)
salt & pepper to taste
crushed red pepper to taste (optional)*
Instructions: Drain the tomatoes, reserving 2 tablespoons of the oil. Put all ingredients in a food processor or blender and purée.

* Can't stand the heat? Leave the crushed red pepper out. If you like things spicy, add more crushed red pepper.
