This isn't  really a marinade, but rather a sauce that you brush on the meat while it's cooking. You can also use it for veggie burgers or portabello mushrooms and for food being cooked on the stove top indoor grill. The sauce will keep in your refrigerator for several weeks.

The recipe is inspired by a sauce made by my former boss, the late Jonnie Parkinson.  Miss Jonnie was the original owner of Biloxi, Mississippi's Project Lounge. The "Place," as Miss Jonnie always called it is a local hangout that's still known for having the best burgers and steak sandwiches in town. A sauce similar to this is the reason why.

Ingredients: 1/2 cup soy sauce
1/2 cup vegetable, canola or grapseed oil
1/4 cup red wine vinegar
1/4 cup Worcestershire Sauce
1/2 teaspoon liquid smoke
2 tablespoons garlic powder
1 teaspoon black pepper
hot sauce to taste
Instructions: Makes about 1 1/2 cups

Combine all ingredients. Generously brush both sides of steak or burger with sauce. Place on grill or pan and use a pastry or sauce brush to brush on additional sauce while meat cooks.
