| Author Notes: | Mexico is well known for its wonderfully refreshing fruit drinks. During our travels in Southern Mexico. We loved the refreshing papaya drinks made with just papaya, lime, ice and sugar – what a treat! Papaya is one of the healthiest foods available. It’s extremely rich in carotenoids and is one of the best sources of vitamin C. If you use maple syrup to sweeten this slush, check the label to make sure it is 100 percent pure maple syrup; or you can replace the maple syrup with stevia extract to reduce the glycemic load. |
| Ingredients: |
2 cups cubed papaya 1/4 cup key lime juice 1/4 cup maple syrup, or substitute with 1/40 teaspoon stevia extract powder 4 cups crushed ice |
| Instructions: |
Wash the outside of the papaya with a vegetable wash. Cut the papaya in half and scoop out the seeds and stringy flesh. Cut a 1 inch slice off 1 papaya half, peel, and cut into pieces; repeat with other half. Place the papaya, lime juice, and maple syrup or stevia in the blender, and blend. Add ice and blend, turning the blender on and off to mix all the ingredients and create a fine icy slush. You may need to break up the mixture a couple of times with a spoon or dinner knife, but make sure the blender is turned off. Taste as you go. You should be able to taste the lime.
