Author Notes: The flavor of habenero chiles matches well with tropical fruit, and this salsa is great with grilled pork or seafood. Habenero chiles are very, very hot, and you should use gloves when handling them.
Ingredients: 2 cups mangos, peeled, seeded, and diced
1/2 cup chopped red onion
1/2 cup chopped cilantro leaves
1 tablespoon fresh lime juice, more or less to taste
salt
1 tablespoon habenero pepper, finely chopped
Instructions: Makes About 3 Cups

In a bowl, combine the mangos, onion, and cilantro. Add lime juice and salt to taste. Add habenero a little at a time, until the desired heat level is reached.
