When you need a quick recipe that makes a statement, try this salsa. Use it to spread on tortillas before rolling with black beans and brown rice or chicken strips.
Ingredients: 2 cups salsa (store bought or click here for recipe)
1 can (11 ounce) Mexi-corn, drained
1 avocado, peeled and diced
2 tablespoons lemon juice
Instructions: Mix together all ingredients. Chill until ready to use.
