Thai Peanut Sauce

Author Notes: While this peanut sauce was designed to be used on Mitch's Thai Chicken or Vegetable Pizza, don't limit it to that. It's also great on grilled meats or even vegetables, or used as a salad dressing.
Ingredients: 1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped carrot
4 minced garlic cloves
1 tablespoon minced shallot
2 teaspoons minced ginger
1 teaspoon lime zest
1 tablespoon crushed red pepper
1/4 cup chopped fresh cilantro
1 tablespoon brown sugar
1/3 cup lite soy sauce
1/3 cup fresh lime juice
2 tablespoons peanut butter
1/4 cup chopped peanuts
Instructions: Makes about 3 cups

Take all the ingredients and put in a blender or food processor blend on high until puréed.
