Review: Guilt-free frying? How can such a thing be?

If anyone could pull of such feats of culinary legerdemain, it would be Barry Bluestein and Kevin Morrissey, well known to svelte cooks everywhere for their fabulous "99% Fat-Free" series of cookbooks. In this book, the "Culinary Super-Heroes" have created food with all the texture and all (well most) of the flavor of your favorite artery clogging fried favorites, but with a fraction of the fat.

You'll find recipes for everything from "fried" chicken to french fries to onion rings to donuts (yes, donuts!). Barry's techniques for trimming fat are ingenious and can easily be put into use for your own recipes as well as those in the book. The biggest testimonial to Bluestein and Morrissey's recipes is the fact that you could serve them at a dinner party and nobody would know they're eating "light" cuisine.
